Kale, pineapple & chia seed smoothie

We always love experimenting in the kitchen at TIEX. Yesterday afternoon we tried this new smoothie recipe and it was well received by our guests!! After hiking to Lopez Mendez and taking on the waves with the local surfers everyone was in need of some extra nourishment and this tasty smoothie did the trick.

Chia seed is an ingredient we’ve been using more here at the retreat. Considered a superfood, chia is high in omega-3 and omega-6 fatty acids (which are essential to our diet) and is also a great source of protein and fiber. This smoothie is a great way to sneak more greens into your day. Dark green leafy vegetables like kale are super nourishing source of minerals.

The recipe below makes enough for 2 smoothies.

1/2 cup of pineapple chunks

2 leaves of lacinato kale

2 teaspoons of soaked chia seeds

1 cup pure water

1-2 teaspoons agave syrup (or honey)

1/2 cup of ice

Blend together until smooth
