				<content:encoded><![CDATA[<p>Onions have been a savored food throughout history the world over and rightly so as they are a nutritional treasure.  Thought to be a dietary staple in the pre-historic diet they are packed full of some seriously heavy weight nutritional compounds.</p>
<p>They are able to absorb more minerals from the soil than nearly any other food, so it&#8217;s not surprising they are high in the minerals calcium, magnesium, phosphorus, potassium, iron and silicon.</p>
<p>Sulfur is essential for growth and repair of connective tissue (keeping all your skin, muscles, &amp; bones in tip top condition). Sulfur also has antiseptic properties which is why onions can prevent the growth of harmful bacteria in the digestive tract.</p>
<p>The other star compound onions contain is quercetin, in fact onions are one of the highest sources of quercetin, which helps eliminate free radicals from the body.</p>
<p>So the humble onion, not so humble after all. Enjoy some of their nutritional benefits today.</p>

				<content:encoded><![CDATA[<p>Most of you will already be big fans of healthy ingredients, but there is nothing like reminding ourselves about how nutritious some of our favourite food are. We love thinking about how foods nourish our body as we eat them. We are starting a food focus series, showcasing some of our favourite produce from The Island Experience retreats starting with cucumbers.</p>
<p>In a world that is so focused on superfoods, it&#8217;s sometimes easy to forget how good some more &#8216;common&#8217; foods are for us. Cucumbers are a prime example.  These super hydrating fruits are a great kidney cleanser and have an alkalising effect on the body. They contain the enzyme erepsin which helps to digest proteins and are a real treat on the body due to their high water content and low sugar content.</p>
<p>Cucumber juice is very refreshing. A simple but very hydrating combination is cucumber with, apple and celery.</p>

<p>Try 1 cucumber with 1 apple and 4-6 ribs of celery.</p>
<p>Cucumbers also make a great afternoon snack as crudites with humous or guacamole. Yum!</p>
